Let's do brunch!

This week I realized how much I miss going out to eat. I love meeting up with friends, have a delicious meal and chatting about life. I decided I am going to use this time to recreate some of my favorite brunch meals from restaurants!


Make your meal special! Take time to plan your menu then plan a zoom date, play a board game or simply have a wonderful conversation with your meal.


Try out these amazing Cinnamon Roll Pancakes!!

Recipe: Serves 4


For the pancakes:

1 1/2 Cups Flour (you can substitute GF flour if needed)

3 1/2 tsp. Baking Powder

1 tsp. Salt

1 Cup Milk (you can sub dairy free milk if needed)

1 egg (egg replacer works too)

3 tbs. melted butter

1/2 tsp. cinnamon


Mix Dry ingredient and wet ingredients separately then slowly pour dry into wet to combine.


For the cinnamon swirl:

4 tbs butter (melted)

1/4 cup brown sugar

1/2 tbs. cinnamon


Mix until combined


For the frosting:

1 oz cream cheese (softened, Room temp)

1/2 cup powdered sugar

1 tsp. vanilla


Mix until combined


Assembly:

Get a skillet nice and hot with melted butter. Put the skillet on medium heat. Add pancake mix and when you start seeing little bubbles swirl the cinnamon mixture into pancakes (I used a sandwich bag and cut a hole in the corner). Flip and allow the cook for another 4-5 minutes. (Make certain your skillet is medium-low when you flip so the sugar does not burn) After your pancakes are cooked drizzle icing over top and enjoy!!!


This is not a light caloric dish, but it is sure to brighten those quarantine blues!
