Mother’s Day Recipe!

Your mama deserves to be spoiled. Wow your her with these insane shrimp tacos for Mother’s Day!


Makes 7 tacos

Ingredients:

Taco Shells

For the Slaw:

2 handfuls of Spinach

3 stalks of Celery

2 handfuls of Carrots

For the Sautéed Veggies:

1 Bell Pepper

1 Medium Onion

1/2 tbs. Olive oil

For the Shrimp:

10 oz. Shrimp

1 Lime

1 tsp salt

1 tsp pepper

½ tsp chili powder

½ tsp paprika

For the Sauce

¼ cup Light sour cream

1 Lime

2 fresh cloves of garlic.

¼ tsp. dried basil

1 tsp. dried parsley

¼ tsp. pepper

½ tsp. salt

What to do:

Prepare the shrimp ahead of time so they can marinate during the day. Cut the shrimp into bit sized pieces. Mix shrimp with lime juice and spices. Cover and let sit for the day.

When ready for dinner:

Julianne the pepper and onions. Get a skillet nice and hot and sautéed veggies with olive oil. When the veggies are almost done add the shrimp in and cook for about 4-6 minutes until they are nice and pink.

While the veggies are cooking mix the ingredients for the sauce together.

For the slaw:

Cut the spinach into small pieces. Shred the celery and carrots (you can use a grater or a food processor.) Mix together with a pinch of salt and a squirt of lime juice.

It’s time to assemble your tacos!!!

Top with hot sauce or fresh herbs (parsley or cilantro would be great!)
